Mexico La Laja Honey
Every year we bring in this honey processed coffee from two farms owned and operated by the La Laja family; Finca La Laja and Finca El Mirador. For the honey process, coffee cherries are depulped and dried slowly on covered raised beds for 20 days. This process results in a sweet coffee with a chocolate and brown sugar flavor profile, mild citrus-like acidity, hint of spice, and a big creamy body we have come to love each harvest.
La Laja is a family farming and milling group located in Veracruz, Mexico. Established in 1920 by Hermilo Sampieri, what started as a small coffee farm in Huatusco has grown to four farms in Veracruz and three farms in the state of Puebla. La Laja offers a wide range of exceptional coffees, and supports smallholder farmers with seedlings and on-staff agronomists providing training to further the quality and traceability of specialty coffee.
This specialty coffee is overflowing with chocolate and sugar notes, and a mild orange acidity that lends a subtle note of spice in the nose. Clean, full, and indulgent; we think this coffee is worth dancing about!
