Decaf Mexico Yajalon MWP

Meet Porcupine Decaf—a clean, flavorful decaf with rich chocolate notes that would taste incredible with or without cream and sugar. Grown in the highlands of Frontera, Chiapas, right on the edge of Guatemala’s famed Huehuetenango region, this coffee shares a rich microclimate with some of the world’s greatest coffee. The farmers behind this lot are part of the NKG Bloom initiative, a program that helps smallholder producers gain access to better resources, training, and market opportunities. NKG Bloom is a program we have worked with in-person, and seen firsthand the good they do for small farmers.
This coffee gets its name from the little porcupines that roam the area, climbing the trees at night while the coffee plants rest under the stars.
Decaffeinated using the Mountain Water Process, this coffee is stripped of caffeine without losing its flavors. Using pure water from Mexico’s highest peak, Pico de Orizaba, the process gently removes caffeine while keeping all the delicious tasting notes intact—no chemicals, just pure, smooth coffee.
We enjoy notes of molasses, sea-salt dusted dark chocolate, vanilla and subtle spice. Drip coffee options (with the coffee ground a little more fine than normal) bring out a richer, more complex body that we love in decaf.
