This lot, Finca El Lilo, is a selective offering from the farm processed by fermenting the whole coffee cherry in sealed containers for 120 hours, then it’s depulped, washed and sun-dried. The anaerobic process is known for creating a very complex and unique flavor profile, which shines at a lighter-medium roast level.
